Pasta with Beans

Pasta with beans is a recipe featuring fresh ingredients from the onion vegetable category.

Ingredients

  • 1 small can red beans
  • 1 clove garlic
  • 1 stalk Celery
  • 7 tbsp olive oil
  • 2 tbsp Tomato paste
  • 200 ml vegetable broth
  • 300 g Penne
  • Salt
  • pepper (from the mill)

Instructions

    Drain the beans, then remove one-third of them and finely puree.

    Peel and chop the garlic. Wash, trim, and slice the celery. Heat the oil in a large pot. Sauté the garlic in it. Stir in the tomato paste and celery, pour in 1/2 cup water and let everything simmer over low heat for about 5 minutes. Add the broth and the bean puree, bring to a boil, add the pasta to the soup and cook until al dente (add more liquid if needed). Finally, add the beans, reheat, and season with salt and pepper.
