Ingredients
- 400 g Farfalle (pasta)
- Salt
- 2 small zucchini
- 500 g tomatoes
- 40 g walnut kernels
- 1 handful basil
- 5 tbsp white wine vinegar
- 50 ml olive oil
- Salt
- Pepper (freshly ground)
- parmesan shavings (for garnish)
Instructions

Cook the pasta according to package instructions in plenty of salted water until al dente. Drain and rinse under cold water, then let drain well.

Wash, peel, and finely dice the zucchini. Wash the tomatoes, remove stems, halve them, seed, and cube the flesh.

Chop the walnuts. Wash the basil, shake dry, and slice leaves into fine strips. Mix pasta, zucchini, and walnuts with vinegar and olive oil. Season with salt and pepper and let sit for about 30 minutes to meld flavors.

Fold in tomatoes and basil, then garnish with Parmesan shavings before serving.
