Pasta Frittata with Bacon

Ingredients
- 200 g capellini
- 1 Zucchini
- 1 Shallot
- 1 Garlic clove
- 50 g bacon (sliced)
- 4 tbsp parmesan
- 3 eggs
- 4 tbsp heavy cream
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)

Instructions

Parboil Capellini in salted water until just undercooked. Rinse with cold water and drain.

Wash, peel, and dice the zucchini into small cubes.

Peel and finely chop the shallot and garlic.

Slice the bacon into strips.

Whisk eggs with heavy cream; fold in pasta, zucchini, shallot, garlic, bacon, and Parmesan. Season with salt and pepper.

Heat 2 tbsp oil in a hot skillet and pour in the mixture. Cook for about 3-4 minutes over medium heat until golden brown on one side. Place a large plate or similar object on top of the pan and flip the frittata onto it. Add remaining oil to the pan, slide the frittata back into the skillet, and cook another 3-4 minutes on the other side.

Transfer the frittata from the pan to a cutting board or plate, slice into pieces, and serve. Garnish with Parmesan as desired.
