Ingredients

  • 150 ml soy drink (soy milk) (or almond, oat milk)
  • fresh raspberries
  • 200 g rolled oats
  • 25 g puffed amaranth
  • 0.5 vanilla pod (aroma)
  • 40 g sunflower seeds
  • 50 g coarsely chopped pecans
  • 50 g coarsely chopped cashews
  • 3 tbsp maple syrup
  • 80 g raspberries

Instructions

    Preheat the oven to 130°C fan-forced. Line two baking trays with parchment paper.

    Melt butter in a pot. Meanwhile, mix all ingredients except the raspberries in a large bowl. Fold in the melted butter. Spread the mixture evenly on the trays and roast in the oven for about 30 minutes until golden yellow, turning several times. Let cool, then fold in the fruit. Transfer to a large storage jar.

    For serving, pour 40-50 g of the muesli mix into a glass and top with milk. Sprinkle fresh berries before serving.
