Ingredients

  • 4 passionfruits
  • 2 Eggs
  • 200 g mascarpone
  • 200 g quark
  • 3 tbsp powdered sugar
  • 1 tbsp orange juice

Instructions

    Halve the passionfruits and scrape out the pulp with seeds, removing 2 tbsp of seedful pulp. Pass the remaining pulp through a sieve to remove seeds.

    Separate the eggs; beat the yolks with mascarpone, quark, powdered sugar, seedful pulp, and the strained pulp until smooth. Whisk the egg whites with orange juice until stiff peaks form and fold into the cream mixture. Spoon into a piping bag fitted with a star tip and serve in cups as desired.
