Almond Pastry

Ingredients
- 200 g Flour
- 100 g ground almonds (unshelled)
- 200 g butter
- 75 g sugar
- 2 tbsp vanilla sugar
- 1 egg
- 1 tsp orange zest (unprocessed)
- flour (for working)
- 2 tbsp vanilla sugar
- 0.5 tsp cinnamon
- 20 ml rum
- 100 g ground almonds (unshelled)
- 1 egg yolk
- 2 Tbsp whipping cream
- sugar (for dusting)
Instructions

Sift flour with almonds on the work surface. In the center make a well and add cold butter pieces, sugar, vanilla sugar, egg, and orange zest. Quickly knead into a smooth dough that no longer sticks to hands; add more flour or cold water if needed.

Wrap in cling film and chill for about 30 minutes.

For the filling mix vanilla sugar, cinnamon, rum, and almonds; add water if necessary until a slightly thick but not too liquid paste forms.

Preheat oven to 180°C fan. Line a baking tray with parchment paper.

Roll dough on floured surface to ~3 mm thickness and cut grooved circles (~6 cm diameter). Place about 1 tsp filling in the center of each, brush edges with water, fold into half-moons, press edges, place pockets on tray. Beat egg yolk with cream and brush pockets. Dust with sugar and bake for about 15 minutes until golden brown.
