Ingredients

  • 500 g almonds
  • 300 g powdered sugar
  • 2 untreated lemons (zest)
  • 200 g pine nuts

Instructions

    Rinse the almonds with boiling water, drain, dry thoroughly (best overnight on a heater) and finely grind them the next day.

    Knead the almonds with powdered sugar, lemon zest, and 6 to 8 tbsp water until a firm marzipan dough forms. Shape into balls, roll in pine nuts, and bake in a hot oven at 200°C for 10–20 minutes (depending on ball thickness) until golden yellow. Store the marzipan balls in an airtight container.
