Parmesan Shrimp Bites

Ingredients

  • 120 g freshly grated Parmesan
  • 400 g shrimp (pre-cooked)
  • 2 Garlic cloves
  • 1 chili pepper
  • 6 tbsp Olive oil
  • Salt
  • 1 lettuce leaf (e.g., iceberg lettuce)

Instructions

    Preheat the oven to 220°C with top and bottom heat and line a baking sheet with parchment paper.

    Scatter the parmesan in small heaps (about 10-12 cm) on the sheet and bake for about 5 minutes until melted. Carefully remove from the sheet and place in a small bowl or muffin tin. Press slightly into the molds and let cool.

    Wash and pat dry the shrimp. Peel the garlic and roughly chop, halve the chili lengthwise, deseed, remove the white membranes and finely slice (gloves optional). Mix garlic, chilies, and oil. Add the shrimp to the mixture and marinate for about 10 minutes.

    Sauté the shrimp in a pan for about 3-4 minutes and season with salt. While this cooks, shred the lettuce into fine strips. Toss the cooked shrimp with the lettuce and fill the parmesan bowls.
