Panzanella with Grilled Peaches, Tomatoes and Goat Cheese

Ingredients
- 3 peaches
- 600 g mixed cherry tomatoes
- 1 red bell pepper
- 2 stems basil
- 2 stems Mint
- 1 Red Onion
- 4 slices spelt bread (50 g each)
- 5 tbsp olive oil
- 4 tbsp white wine vinegar
- Salt
- Pepper
- 200 g goat fresh cheese (45% fat in cream)
Instructions

Wash and pat dry peaches, tomatoes, bell pepper and herbs. Halve peaches, pit them and cut into wedges. Clean tomatoes and optionally cut smaller. Cut bell pepper in half, clean and cube it. Pick leaves from herbs. Peel onion and slice thinly.

Brush bread slices and peach halves with 1 tbsp olive oil. Grill in a skillet over medium heat for 5 minutes until streaks appear. Break bread into pieces.

Meanwhile whisk vinegar with remaining olive oil, salt and pepper to make the dressing.

Arrange prepared ingredients brightly on plates or a platter. Crumble cheese over them and drizzle the dressing on top.
