Fried Mushrooms with Remoulade

Ingredients

  • 800 g fresh porcini mushrooms
  • 60 g flour
  • 2 Eggs
  • 100 g breadcrumbs
  • 6 tbsp oil
  • 300 g mixed salad leaves (radicchio, arugula, frisée etc.)
  • 300 ml mayonnaise
  • 8 cornichons
  • 3 silver onions
  • 1 chopped dill

Instructions

    Clean the porcini mushrooms thoroughly and halve them. In a small bowl whisk the eggs. First coat the mushrooms in flour, then dip them in the beaten eggs, and finally roll them in breadcrumbs.

    Heat the oil and fry the mushrooms until golden brown on all sides. Drain on paper towels.

    Wash the salad leaves and arrange them on plates.

    Dice the cornichons and silver onions finely, mix with dill and fold into the mayonnaise.

    Place the fried mushrooms on the prepared plates and serve with the remoulade sauce.
