- 12 young carrots (with greens)
- 12 slices thin Parma ham
- 1 bundle arugula
- 2 tbsp sharp mustard
- capers for garnish
- Salt
- white pepper
- Ciabatta for serving

Peel the carrots and trim the greens. Blanch the carrots in boiling salted water for 3-5 minutes, shock them in ice water, then drain.

Wash and dry the arugula. Lay Parma ham slices side by side on a board or clean work surface, spread a thin layer of mustard, top each with arugula and one carrot, lightly season with pepper and salt, roll up, and arrange in small bowls. Garnish with capers and serve with ciabatta.
