Ingredients
- 100 g baguette
- clear broth (instant)
- 4 tbsp olive oil
- 2 Garlic cloves
- 1 tbsp White Wine Vinegar
- 2 ripe tomatoes
- 2 red bell peppers
- 2 yellow bell peppers
- 1 green bell pepper
- Salt
- freshly ground pepper
- 1 pinch sugar
- 2 onions
Instructions

Strip the baguette and tear into pieces. Pour warm broth over them.

Heat olive oil. Peel and finely dice garlic. Briefly sauté in hot oil. Add olive oil and vinegar to the soaked baguette.

Score tomatoes. Blanch for 1 minute with boiling water, then shock in cold water, peel, and cut into pieces. Quarter bell peppers, clean, and remove white membranes. Dice half of the yellow and the green pepper and set aside.

Coarsely chop remaining peppers. Blend them with the soaked baguette and tomatoes in a blender until smooth. Season with salt, pepper, and sugar. Chill well. Peel and dice onions. Sprinkle the soup with paprika and onions before serving.
