Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 700 g red bell peppers
  • 1 handful young spinach leaves
  • 150 g salsiccia
  • 2 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 900 ml vegetable broth
  • Salt
  • Pepper (freshly ground)
  • 250 g tortellini (any type, ready-made)
  • parmesan shavings (for garnish)
  • basil (for garnish)

Instructions

    Peel and finely chop the shallot and garlic. Wash the peppers, halve them, remove seeds and white membranes, then dice small. Rinse the spinach, pat dry, and spin dry. Slice the sausage into thin strips. In a hot pot with oil, brown the sausage, remove and set aside. Sauté the shallot and garlic in the oil until translucent, add the peppers, cook briefly, stir in tomato paste, then pour in broth. Simmer over medium heat for about 40 minutes.

    Season the soup with salt and pepper, strain through a muslin-lined sieve, squeeze out excess liquid, and reheat the stock. Add the tortellini to the broth and simmer for about 10 minutes until cooked. Stir in the spinach and sausage, warm through, taste again, then serve on plates garnished with parmesan shavings and basil.
