Green Vegetable Soup with Noodles

Ingredients
- 250 g young spinach
- 1 small onion
- 1 Garlic clove
- 2 tbsp butter
- 800 ml chicken broth
- Salt
- pepper (ground)
- nutmeg
- broccoli (100 g each)
- snow peas (100 g each)
- 100 g young green bean pods
- 125 g whipping cream
- 12 green fresh tortellini (homemade or store‑bought, refrigerated)
- 30 g freshly grated Parmesan

Wash and drain the spinach. Peel garlic and onion, dice finely, and sauté in hot butter until translucent. Add spinach and let it wilt. Pour in broth, bring to a boil, season with salt, pepper, and nutmeg, then simmer for about 10 minutes over low heat.

Break broccoli into florets and trim ends of snow peas. Blanch the broccoli, snow peas, and green bean pods in boiling salted water for 3–4 minutes, then drain, shock in ice water, and dry. Puree the spinach soup, return to pot, add cream, bring to a boil, and adjust seasoning. Add tortellini and cook 4–8 minutes depending on size, then add vegetables and heat everything together for 1–2 minutes.
