Ingredients

  • 80 g white beans
  • 400 g tortellini
  • 200 g Cabanossi
  • 1 onion
  • 1 Garlic clove
  • 1 tbsp oil
  • 100 g Spinach
  • Salt
  • ground pepper
  • 750 ml vegetable broth
  • 100 g grated Emmental

Instructions

    Cover beans with water and let them soak overnight. The next day drain through a sieve and rinse the beans cold.

    Peel the onion and garlic, roughly chop the onion, finely mince the garlic. Sauté both in oil, add the beans, pour in vegetable broth and simmer for about 35 to 40 minutes.

    Meanwhile, rinse, wash and drain the spinach. Slice the Cabanossi. Add the tortellini, let it cook with for 2 minutes. Add the sausage and spinach to the cooked beans, remove the pot from heat and let everything steep together for another ~5 minutes. Season with salt and pepper, serve on plates sprinkled with cheese. Pair with toasted bread.
