Papaya Chutney

Ingredients
- 1 kg ripe papaya
- 4 shallots
- 250 ml white wine vinegar
- 150 g brown sugar
- 1 tbsp black mustard seeds
- 1 tbsp Garam Masala
- Salt
- Cayenne pepper
Instructions

Peel, halve, core the papayas and dice the flesh. Peel and finely dice the shallots.

Bring the vinegar with sugar, mustard seeds, Garam Masala and 150 ml water to a boil. Simmer for about 10 minutes, then add the papaya and shallots, stirring occasionally, and simmer gently for another ~10 minutes.

Season with salt and cayenne pepper, fill prepared jars, seal tightly and let cool before refrigerating.
