Chutney with Oranges and Pumpkin

Ingredients
- 800 g pumpkin flesh (peeled and deseeded)
- 4 oranges
- 2 onions
- 2 red chili peppers
- 200 ml apple cider vinegar
- 2 Cloves of garlic
- 2 star anise
- 150 g cane sugar
- 1 tsp salt

Dice the pumpkin into small cubes. Peel the oranges thoroughly and cut them into coarse cubes. Peel and cube the onion. Wash, trim, and slice the chili peppers into rings.

Combine the pumpkin with the onion, chili, vinegar, about 200 ml water, garlic cloves, star anise, sugar, and salt in a pot. Bring to a slow boil, stirring occasionally, and simmer for about 25 minutes until thickened. Add the oranges at the end and cook for another 5 minutes. Transfer to prepared jars, seal tightly, and allow to cool completely.
