Ingredients

  • 1 kg apricots
  • 2 cm ginger
  • 2 onions
  • 1 chili pepper
  • 3 lime leaves
  • 270 ml apple cider vinegar
  • 150 ml orange juice
  • 1 tsp coriander seeds
  • 300 g cane sugar

Instructions

    Score the apricots, blanch them, peel, halve and pit. Quarter the apricots, cut one-third into small pieces. Peel and finely chop the ginger and onions. Slice the chili into thin rings. Wash the lime leaves and cut into fine strips.

    Combine all ingredients in a pot and slowly heat while stirring. Cook over medium heat for about 40 minutes until thickened. Transfer to jars, seal tightly, invert, and allow to cool.
