Ingredients

  • 500 g Brussels sprouts
  • 500 g small boiled potatoes (firmly cooked)
  • Salt
  • 1 onion
  • 0.5 tsp dried thyme
  • 4 bratwurst sausages
  • 3 tbsp butter
  • black pepper (freshly ground)

Instructions

    Clean the Brussels sprouts, cross‑cut the stem ends and simmer in lightly salted water for about 10 minutes, drain, shock with ice water, and let dry.

    Peel the onion and dice it.

    Quarter the potatoes lengthwise and slowly fry them in 2 tbsp hot butter while occasionally turning. Sprinkle thyme, add onions, and cook for a few minutes; then add Brussels sprouts and warm through. Season with salt and pepper.

    Brown the sausages in the remaining butter in a pan until cooked all around, slice into thicker pieces, and mix with the potato‑sprout mixture.
