Ingredients
- 2 Handfuls Basil
- 1 clove garlic
- 30 g pine nuts
- 1 tbsp Lemon Juice
- 60 g freshly grated Parmesan
- 120 ml olive oil
- Pepper (freshly ground)
- Salt
- 24 oysters

Peel the basil leaves and skin the garlic clove. Combine both with the pine nuts, lemon juice, 2 tbsp parmesan and a splash of olive oil; blend into a fine paste, adding more oil as needed for desired thickness. Season with pepper and a pinch of salt.

Wash and open the oysters. Drain the water and loosen the oyster meat with a knife, leaving it in its shell. Spoon the pesto over each oyster, sprinkle with remaining cheese, then grill on high heat for 5–6 minutes until the cheese melts.
