A fresh oyster dish featuring a bright herb sauce crafted from basil, garlic, pine nuts, lemon juice, and Parmesan cheese. Spoonsparrow offers this recipe as part of its mussel category.

Ingredients

  • 2 Handfuls Basil
  • 1 clove garlic
  • 30 g pine nuts
  • 1 tbsp Lemon Juice
  • 60 g freshly grated Parmesan
  • 120 ml olive oil
  • Pepper (freshly ground)
  • Salt
  • 24 oysters

Instructions

  1. 1.

Peel the basil leaves and skin the garlic clove. Combine both with the pine nuts, lemon juice, 2 tbsp parmesan and a splash of olive oil; blend into a fine paste, adding more oil as needed for desired thickness. Season with pepper and a pinch of salt.

  2. 2.

Wash and open the oysters. Drain the water and loosen the oyster meat with a knife, leaving it in its shell. Spoon the pesto over each oyster, sprinkle with remaining cheese, then grill on high heat for 5–6 minutes until the cheese melts.
