Ingredients

  • 8 oysters
  • 4 cocktail tomatoes
  • 0.5 tsp finely chopped parsley
  • 0.5 tsp finely chopped basil
  • 1 tbsp lime juice
  • Pepper
  • 1 pinch fleur de sel
  • 1 egg yolk
  • 1 pinch white pepper
  • Salt
  • 2 tbsp passion fruit purée
  • 2 sole fillets (or another premium fish fillet)
  • 1 tbsp finely chopped, peeled almond kernels
  • 1 Tbsp clarified butter

Instructions

    Wash tomatoes, remove stems and dice the flesh. Crack oysters, extract mussel meat, roughly chop, mix with tomatoes, parsley, basil, pepper, fleur de sel, and lime juice; season and chill immediately. Whisk egg yolk with passion fruit purée, salt, and pepper. Whip the mixture over a hot water bath until it thickens.

    Halve sole fillets lengthwise, pat dry, skewer, press one side into almonds, and fry in hot clarified butter until crisp brown. For serving, spoon mussel tartare into small cocktail glasses, top each with a spoonful of passion fruit sauce, and place a fish skewer on top. Serve immediately.
