Overnight Oats with Peach Puree

Ingredients
- 45 g Buckwheat flakes (or rolled oats)
- 1 tbsp Pumpkin seeds
- 1 tbsp Sunflower seeds
- 1 tbsp cashews
- 1 tbsp Flax seeds
- 200 ml Almond drink (almond milk)
- 0.5 tsp cinnamon
- 4 fresh peaches
- 1 Orange (juice)

Combine buckwheat flakes, pumpkin seeds, sunflower seeds, and cashews with flax seeds in a bowl. Mix with almond milk or water and cinnamon, cover overnight and let swell.

The next morning, halve the peaches and remove the stones. Roughly dice the peaches and place them in a saucepan with the orange juice. Bring everything to a boil and simmer for 5-6 minutes until the peaches are soft. Puree the peach pieces finely with an immersion blender if desired.

Now layer the overnight oats alternately with peach puree into glasses. Garnish with nuts and other fruits as desired.
