Avocado Cream Cheese Bread with Carrot, Cucumber and Sprouts: Tastes pleasantly fresh and is ready in no time.
Ingredients
- 1 small carrot
- 0.5 Avocado
- 1 lemon
- Salt
- Pepper
- 2 slices spelt wholemeal bread
- 1 tbsp cream cheese (13% fat)
- 1 Mini Cucumber
- 1 small handful beetroot sprouts (or other sprouts of your choice)
Instructions

Peel, wash and coarsely grate the carrot using a vegetable peeler.

Pit, peel and mash the avocado flesh in a bowl with a fork. Squeeze the lemon pieces and mix with grated carrots, salt and pepper into the mashed avocado.

Toast the bread slices briefly as desired and spread each with half of the cream cheese.

Wash the cucumber and peel it with a vegetable peeler. Cut into slices and arrange in a circle on the bread slices.

Arrange the avocado mixture on top. Rinse, pat dry the sprouts and garnish the breads with them.
