Ingredients

  • 1.6 kg potatoes
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp oil
  • 12 mushrooms
  • 100 g Arugula
  • 500 g quark
  • 150 g full‑fat yogurt
  • 2 tbsp basil

Instructions

    Wash and halve the potatoes. Brush a baking sheet with 2 tbsp oil. Season the potatoes with salt and pepper, place them cut side down on the sheet. Bake in a preheated oven at 200°C (second rack from bottom) for about 30 minutes.

    Clean the mushrooms. After 30 minutes, distribute the mushrooms between the potatoes, season with salt and pepper, brush with remaining oil, and bake for an additional 20 minutes. Wash and dry the arugula; set aside a few leaves for garnish and chop the rest. Mix quark, yogurt, chopped arugula, and basil; season with salt and pepper to taste.
