Ingredients
- 500 g green beans
- 1 Organic lemon
- 1 tsp Honey
- 1 pinch sea salt
- 5 tbsp extra‑virgin olive oil
- 20 g ginger (2–3 cm piece)
- 1 tbsp chopped lemon balm
- 1 tbsp chopped bean herb
- 1 tbsp chopped parsley
- 1 tbsp chives
- 4 Garlic cloves
Instructions

Wash beans, trim ends and remove tough strands. Blanch in boiling salted water for about 8 minutes, drain and shock in cold water to stop cooking. Drain and place in a bowl.

Rinse lemon under hot water, pat dry and zest finely. Squeeze juice and mix with honey, salt and 4 tbsp olive oil, then whisk into the zest. Peel ginger and grate finely; add to vinaigrette along with herbs. Drizzle dressing over beans.

Peel garlic and slice lengthwise. Heat remaining oil in a pan and sauté garlic slices over medium heat until golden‑yellow, then scatter over beans.
