Ingredients
- 4 filets (about 180 g each)
- 2 tbsp plant oil
- Pepper (freshly ground)
- 50 g black truffle pesto (or truffle cream substitute)
- 400 g fresh mushrooms (e.g., chanterelles)
- 1 tbsp butter
- Salt
- 20 ml cognac
- 200 ml whipping cream
- 2 tbsp finely chopped chives
- a handful of young salad leaves
- black truffle (optional)

Preheat the oven to 100°C with fan and top heating.

Pat the steaks dry. In a hot pan, sear each side in oil for 1-2 minutes until browned. Remove from pan, season all sides with pepper, brush with truffle pesto, and place on a rack (under a fat pan or baking sheet). Transfer to the oven on the middle rack. Cook 8–20 minutes depending on thickness and desired doneness.

Clean the mushrooms. Melt butter in the pan residue and sauté the mushrooms, seasoning with salt and pepper. Deglaze with cognac, add cream, and reduce until thickened. Taste again.

Plate the steaks and sprinkle with chives. Arrange the mushrooms beside them. Garnish with young salad leaves and freshly shaved truffle if desired.
