Tomato Confit

Ingredients

  • 70 g sesame seeds
  • 8 large tomatoes
  • 150 ml oil
  • 2 tbsp honey
  • Salt
  • pepper (from grinder)

Instructions

    Roast the sesame in a dry pan without fat while stirring, then set aside.

    Brush the tomatoes with oil, then place them together with remaining oil into a baking dish and bake in a preheated oven at 150°C for about 20 minutes. Remove from oven and let cool.

    Peel the tomatoes, quarter them, and remove seeds. Cut the flesh into roughly 1 cm cubes.

    Boil honey in a small pot, add tomatoes, season with salt and pepper, and simmer gently for about 2 minutes. Transfer to a bowl and sprinkle with sesame seeds; serve warm.
