Original Lebkuchen

- 50 g candied orange peel
- 50 g candied lemon peel
- 125 g flour
- 250 g ground nuts (e.g., hazelnuts)
- 100 g chopped almonds
- 1 tsp Lebkuchengewürz spice blend
- 2 Eggs
- 40 ml rum
- 2 tbsp vanilla sugar
- 250 g brown sugar
- 2 tbsp cocoa powder
- 25 baking sheets (diameter 7 cm)
- 150 g powdered sugar
- 2 tbsp lemon juice

Add the candied orange peel and lemon peel with 2 tbsp flour to a blender and finely chop. Mix the nuts with the remaining flour and Lebkuchengewürz spice blend. Whisk the egg with rum, vanilla sugar, and brown sugar until frothy. Fold in the chopped candied fruits, cocoa powder, and nuts using a spatula until well incorporated. The dough should be pliable; adjust nut quantity slightly if needed.

Preheat the oven to 180°C fan (356°F).

Place the baking sheets on a tray lined with parchment paper and put about 2 tbsp of dough on each sheet in the center. Smooth the surface and edges with a damp palette or spoon. Once all cookies are shaped, chill for about an hour so they keep their shape.

Bake in the preheated oven for approximately 25 minutes until golden brown.

For the glaze, whisk powdered sugar with lemon juice to make a thick glaze. Brush the still-hot cookies with the glaze and let them cool.
