Spiced Almond Cake

Ingredients
- soft butter (for the pan)
- soft flour (for the pan)
- 150 g honey
- 75 g brown sugar
- 100 ml milk
- 1 tsp Baking Soda
- 1 tsp anise seeds
- 1 tsp ground cinnamon
- 0.5 tsp ground ginger
- 1 pinch salt
- 50 g dried fruit (e.g., cherries and apricots)
- 50 g shelled almonds
- 100 g rye flour
- 150 g wheat flour
- 1 untreated lemon (zest)
- 2 egg yolks

Preheat the oven to 180°C fan. Butter and flour a loaf pan.

In a pot, combine honey (leaving 2 tbsp), sugar, and milk; warm while stirring and dissolve baking soda. Remove from heat. In a bowl mix anise, cinnamon, ginger, salt, chopped dried fruit, almonds, rye flour, and wheat flour. Add the milk mixture with lemon zest and egg yolks, knead into a smooth batter. Pour into the pan, level the surface, and bake for about 50 minutes (test with a skewer).

Stir remaining honey with 2 tbsp warm water.

Remove cake from oven, brush with honey solution, let cool, unmold, and slice.
