Christmas Spice Cake

Ingredients
- 100 g pecan nuts
- 200 g dates
- 125 g butter
- 6 Eggs
- 100 g sugar
- 250 g flour
- 2 tsp cocoa powder
- 75 g raisins
- 1 tbsp cinnamon
- 1 pinch cloves
- 2 tsp Baking powder
- fat (for the pan)
- milk (as needed)
- 150 g powdered sugar
- 1 tbsp Lemon Juice
- silver sugar pearls

Coarsely chop the nuts. Pit and finely chop the dates. Melt the butter and let it cool. Separate the eggs; beat the yolks with sugar until fluffy, then gradually fold in the butter, flour, baking powder, cocoa powder, nuts, dates, raisins, cinnamon, and cloves. If the batter is too thick, stir in a little milk.

Beat the egg whites to stiff peaks and gently fold them into the yolk mixture. Grease and flour a loaf pan. Pour in the batter and smooth the top. Bake in a preheated oven at 180°C (160°C fan) for about an hour, then remove the cake and let it cool. For the glaze, whisk powdered sugar with lemon juice to make a pourable icing and spread it over the cake. Garnish the Christmas spice cake with silver sugar pearls and allow the glaze to set.
