Ingredients

  • 250 g honey
  • 125 g sugar
  • 1 egg
  • 1 tsp cinnamon
  • 0.5 tsp cloves
  • 0.5 lemon (unprocessed)
  • 0.5 orange (unprocessed)
  • 50 g candied lemon zest
  • 50 g candied orange zest
  • 50 g ground hazelnuts
  • 1 tbsp cherry brandy
  • 375 g flour
  • 2 tsp Baking powder
  • 80 ml milk
  • 4 tbsp gooseberry jam
  • 100 g dark chocolate couverture
  • 2 tsp butter

Instructions

    Preheat the oven to 170°C (fan). Line a baking sheet with parchment paper.

    Whisk honey, sugar and egg until frothy. Stir in cinnamon, cloves and the grated zest of lemon and orange. Finely chop the candied lemon and orange zest and mix with the nuts. Add the cherry brandy. Combine flour and baking powder and fold into the wet mixture. Add enough milk to achieve a soft dough consistency. Spread the dough evenly on the sheet and bake for 30-40 minutes until golden brown.

    Heat the jam and glaze the still-hot cake immediately, then cut into slices or cubes and let cool.

    Melt the chocolate couverture with butter in a double boiler over low heat, then use it to glaze each piece. Let them dry at room temperature.
