Fruit Bread with Honey
The fruit bread with honey from Spoonsparrow tastes excellent with tea or coffee and is also a great snack for on the go.
Ingredients
- 120 g dried pears
- 120 g dried seedless plums
- 120 g dried figs
- 120 g raisins
- 120 g currants
- 50 g almonds
- 50 g hazelnuts
- 30 g lemon zest
- 30 g orange zest
- 140 g flour
- 1 tsp anise seeds
- 0.25 cube yeast (≈11 g)
- 3 tbsp honey
- 0.5 tsp ground cinnamon
Instructions

Dice the pears finely and soak overnight in plenty of water, then bring to a boil the next day with the soaking liquid. Dice plums, figs, raisins, and currants and place them in a bowl; pour the pears and their soaking liquid over them. Let sit until well rehydrated. Roughly chop almonds and hazelnuts, dice lemon and orange zest. Drain the fruits. Mix flour with anise seeds, create a well in the center, and crumble the yeast into it. Stir in 3–4 lukewarm water, dust with a little flour, cover, and let rise in a warm place for about 15 minutes. Drizzle honey over the flour, sprinkle cinnamon on top, and knead with 4 tbsp lukewarm water to form a smooth dough. Cover again and let rise for another 45 minutes. Add the fruits, raisins, currants, nuts, almonds, lemon zest, and orange zest; knead well. Let rest covered for 30 minutes.

Preheat the oven to 200°C (400°F) with upper and lower heat.

Shape the dough into a loaf, place it on a baking sheet lined with parchment paper, and bake in the preheated oven. Keep a bowl of water nearby and bake the bread for about 1 hour.

Remove the fruit bread from the oven, spread lightly warmed jam over it, and let cool.
