Orange Pomegranate Marmalade

Ingredients
- 4 pomegranates
- 2 oranges
- 500 g invert sugar (2:1)
- 125 ml orange juice
- 1 tbsp Lemon Juice

Halve the pomegranates crosswise. From three fruits, remove the seeds, strain through a sieve and catch the juice.

Remove the seeds from the remaining pomegranate.

Peel the oranges with a sharp knife, removing the white rind, then separate the segments along the membranes. Catch the released juice and squeeze out the rest. Cut the segments into small pieces.

Mix pomegranate juice and seeds with orange segments and lemon juice, adding more orange juice to reach 1 l if needed. Stir in invert sugar, bring everything to a boil and simmer for 4 minutes while stirring, keeping it bubbly. Immediately pour into hot-washed jars, seal, place the lids on top for 15 min, then flip and let cool.
