Orange Pancakes

Ingredients
- 50 g liquid butter
- 100 g flour
- 1 tbsp sugar
- 2 Eggs
- 150 ml milk
- 1 pinch salt
- 50 g clarified butter
- 3 untreated oranges
- 1 Tbsp vanilla sugar
- 20 ml orange liqueur
- 1 tbsp almond flakes
- 1 sprig lemon balm

Squeeze half an orange and quickly whisk it with the remaining batter ingredients to make a thin batter. Chill in the refrigerator for 30 minutes. Squeeze the rest of the orange halves.

Rip off zest from one orange, then peel and filet thickly. In a splash of orange juice with vanilla sugar and liqueur, simmer over low heat until syrupy.

Heat clarified butter in a pan in portions, and gradually bake eight crepes, keeping them warm in the oven. Place the orange fillets into the hot syrup.

Toast almonds in a dry pan without fat. Arrange crepes on plates, each topped with several orange fillets and sauce, fold decoratively, sprinkle with zest, and garnish with lemon balm.
