Orange Muffins

Ingredients
- 200 g Flour
- 50 g ground almonds
- 125 g room‑temperature butter
- 100 g sugar
- 4 eggs
- 1 pinch salt
- 2 tsp Baking powder
- 150 ml milk
- 6 organic oranges (including freshly squeezed juice)
- Grand Marnier (orange liqueur)
- 1 tsp bourbon vanilla
- Orange zest (from 2 organic oranges)

Whisk butter and sugar until fluffy. Add eggs and salt, whisk to a creamy mixture. Stir in flour, baking powder, and almonds, then gradually pour in milk while mixing into a smooth batter; adjust with slightly less or more than 150 ml if needed. Butter and dust 12 muffin tins with flour. Fill the tins with batter. Place on a baking sheet and bake at 160°C fan‑forced for about 30 minutes until golden yellow. Immediately remove muffins and drizzle with 1 tsp Grand Marnier.

Heat orange juice with 3 tbsp Grand Marnier and 4 tbsp sugar until sugar dissolves, then strain through a fine sieve into another pot. Add vanilla and zest, bring to a gentle boil, then remove from heat.

Arrange the muffins on an orange sauce plate and drizzle with additional orange sauce. Serve warm.
