Grandma's Blackberry Cake
A true classic: Grandma's blackberry cake from Spoonsparrow tastes good for young and old!
Ingredients
- 250 g flour
- 1 pinch salt
- 75 g sugar
- 1 egg
- 150 g butter
- flour (for dusting)
- 500 g blackberries
- 2 tbsp vanilla sugar
- 2 tbsp Cornstarch
- 400 ml whipping cream
- 80 g semolina
- 80 g sugar
- 1 untreated orange (zest)
- 2 Eggs
- 2 egg yolks
Instructions

Knead the flour with salt, sugar, egg and butter pieces by hand into a smooth dough. Shape it into a ball, wrap in cling film and refrigerate for about 30 minutes.

Preheat the oven to 180 °C fan. Line a springform pan with parchment paper.

Rinse the blackberries, clean them and pat dry. Mix with vanilla sugar and cornstarch.

Roll out the dough on a floured surface and line the pan with it. Distribute the blackberries evenly over the dough and bake in the oven for about 15 minutes.

For the glaze bring the cream with semolina, sugar and orange zest to a boil. Remove from heat and let cool slightly. Whisk in the eggs and yolks. Take the cake out of the oven, pour the glaze over it and bake for another ~40 minutes until golden brown.

Let the cake cool in the pan. Release from the pan and cut into pieces.
