Orange Cream Caramel

- 150 g sugar
- 1 tsp lemon juice
- 3 eggs
- 2 egg yolks
- 70 g sugar
- 1 tbsp grated organic orange zest
- vanilla beans
- 0.5 l milk
- orange fillets (for garnish)
- 6 portion molds
- butter (for the molds)
Instructions

Grease the portion molds with butter. In a small saucepan caramelize the sugar with 4 tbsp water and lemon juice, stirring occasionally until golden brown. Immediately spread onto the prepared molds.

Beat the eggs with the yolks and sugar. Add orange zest to the egg mixture. Boil the vanilla milk; pour the hot milk into the egg mixture and stir. Pour this into the molds.

Place the molds on a high baking tray and carefully add boiling water up to about half the height of the molds.

Bake the orange cream in a preheated oven at 160°C for about 50 minutes, then remove and let cool.

Serve the orange cream by pouring onto plates and garnish with orange fillets.
