Ingredients

  • 1 kg fresh ripe rosehips
  • 300 g brown sugar
  • 0.5 cinnamon stick
  • 4 cloves
  • 1 untreated orange (zest)
  • 1.5 l brandy
  • 1 kg oranges

Instructions

    Trim stems and tips off the rosehips. Wash the fruits and place them in a large bowl. Sprinkle 200 g of brown sugar over them, mix well, and let the mixture infuse overnight in a cool place. The next day carefully transfer the mixture into a bulging bottle or a larger, tightly sealable container. Add the cinnamon stick, cloves, and orange zest. Pour in the brandy. Seal tightly and leave to steep in a bright spot for about 2 months.

    Then strain the liqueur through a clean muslin cloth-lined sieve into a pot. Use the cloth to squeeze out remaining liquid from the fruits. Squeeze fresh orange juice and combine with the remaining sugar, bringing it to a boil. Pour into prepared bottles and top up with the liqueur. Seal tightly, store in a cool dark place, and let it mature for at least another 2 weeks before opening.
