Ingredients

  • 200 g Flour
  • 100 g ground almonds (peeled)
  • 200 g butter
  • 75 g sugar
  • 2 tbsp vanilla sugar
  • 1 egg
  • 2 tbsp Orange juice
  • 2 tsp orange zest (unprocessed)
  • flour (for working)
  • powdered sugar (for dusting)
  • 200 g dark chocolate couverture
  • 1 tbsp orange liqueur

Instructions

  1. 1.

Sift the flour and almonds onto a work surface. Create a well in the center and add cold butter pieces, sugar, vanilla sugar, egg, orange juice, and zest. Knead quickly into a smooth dough that no longer sticks to hands; add more flour or cold water if needed.

  2. 2.

Wrap in plastic wrap and chill for about 30 minutes.

  3. 3.

Preheat oven to 180°C fan. Line a baking tray with parchment paper.

  4. 4.

Roll the dough on a floured surface into a log (≈4 cm diameter). Slice into 1–1.5 cm thick rounds, shape into balls, flatten slightly, and place on the tray.

  5. 5.

Bake for 10–12 minutes until light yellow.

  6. 6.

While warm, roll orange cookies in powdered sugar to dust them.

  7. 7.

For chocolate‑coated cookies, chop couverture and melt with liqueur over a double boiler. Let cool slightly, dip each cookie halfway, and set on a wire rack to dry.
