Ingredients

  • 1 kg bitter orange (pomaranze) organic
  • 800 ml water
  • 1 kg gelatin sugar (2:1)
  • 60 ml orange liqueur
  • 2 lemons (juice)

Instructions

  1. 1.

Wash the oranges well and fill a very large pot with water. Halve the oranges, squeeze them, add fruit flesh and juice to the pot along with lemon juice.

  2. 2.

Trim the white pith from the peels, cut the peels into very fine strips and add them to the pot with the juice. Place the seeds in a tea bag, tie it and put it in the pot.

  3. 3.

Heat everything and simmer uncovered for 2 hours until the peels are soft. Remove the tea bag and let the rest cool.

  4. 4.

Add gelatin sugar and stir while bringing to a boil; keep stirring constantly for about 4 minutes until bubbling, then test for setting.

  5. 5.

If not set yet, cook longer; otherwise fill jars completely, seal well, let cool and label.
