Orange Cake

Ingredients
- 300 g liquid butter
- 300 g sugar
- 300 g flour
- 4 eggs
- 400 ml orange juice
- 1 packet baking powder
- 2 oranges (unprocessed)
- 3 oranges
- 10 g cornstarch
- 1 cinnamon stick
- 50 ml grenadine
- 20 ml orange liqueur

Beat butter, sugar, flour, eggs, 200 ml orange juice, baking powder and the grated zest of an unprocessed orange in a food processor. Pour into a greased springform pan and bake at 180°C for about 40 minutes. Let cool briefly, lift out with a sharp knife and set on a cooling rack.

Meanwhile, use a zester to strip strips from the second unprocessed orange. Mix grenadine and orange liqueur, add the zest, and let steep for 30 minutes.

Fillet the remaining oranges. (Peel oranges thoroughly with a sharp knife, removing the white pith. Cut fruit fillets from the separating membranes.) Whisk 50 ml cold orange juice with cornstarch. Bring the remaining orange juice to a boil with the cinnamon stick, stir in the starch mixture and simmer gently for 3-4 minutes. Fold in the orange fillets.

Spread the orange ragout over the cake. Arrange the zest as garnish on top. Serve the cake warm.
