Orange Cake

Ingredients
- 300 g butter
- 300 g sugar
- 4 eggs
- 300 g flour
- 1 tsp Baking powder
- butter (for greasing)
- 500 ml whipping cream
- flour (for dusting)
- 1 packet gelatin
- 5 tbsp chopped orange zest
- 5 tbsp chopped lemon zest
- 750 ml orange juice
- 1.5 packets vanilla pudding mix
- 4 tbsp sugar

Grease the baking pan with butter. Preheat the oven to 200°C. Dust the pan with flour, shake off excess. Cream the soft butter until fluffy. Dissolve two-thirds of the sugar in it while stirring. Separate the eggs. Collect the egg whites in a second bowl. Add the yolks to the creamed butter.

Beat the butter, sugar and yolks together until thick and golden yellow. Sift flour with baking powder over the mixture. Mix briefly with a whisk. Whip the egg whites stiff, adding the remaining sugar. Fold the meringue into the batter. Pour the dough into the prepared pan and smooth the top. Bake in the hot oven for 50-60 minutes (test with a skewer). Remove from the pan and let cool completely. Carefully cut the cake horizontally, then slice lengthwise into three layers.

Mix vanilla pudding powder with 4 tbsp orange juice. Bring the remaining orange juice and sugar to a boil, stir in the pudding mix, simmer briefly, then set aside. Let cool slightly, then fill the cake with the orange cream. Stack the layers and spread the remaining orange cream on top.

Whip the cream with gelatin until very stiff and coat the entire cake. Sprinkle orange and lemon zest over the cake and chill for about 2 hours before serving. Optionally garnish with lime or lemon zest.
