Ingredients
- 500 ml orange juice
- 6 kumquats
- 150 g powdered sugar
- 2 egg whites
- 6 kumquats
- 0.25 l orange juice

Wash kumquats hot, dry thoroughly. Cut 6 pieces lengthwise into thin strips and collect the juice. Mix collected juice with 400 ml orange juice and 50 g powdered sugar, stir well, and refrigerate for about 2 hours. Whip egg whites until stiff, then fold in remaining orange juice, leftover powdered sugar, and kumquat strips. Gently fold everything into the chilled mixture, transfer to a shallow metal bowl, and freeze with occasional stirring or finish in an ice cream maker.

For serving scoop into glasses. Slice remaining kumquats, mix with orange juice, and pour over the ice cream scoops.
