Ingredients

  • 700 g red onions
  • 2 tbsp sunflower oil
  • 2 tsp sugar
  • Salt
  • black pepper (freshly ground)
  • 800 ml meat broth
  • 200 ml dry white wine
  • 2 Garlic cloves
  • 1 tsp lemon juice
  • 8 slices baguette
  • 60 g freshly grated Gruyère cheese
  • 2 tbsp freshly chopped parsley

Instructions

    Peel the onions and slice them into thin rings. Heat the oil in a pot and slowly sauté the onions for 10–15 minutes while stirring, until they soften. Season with sugar, salt, and pepper, then simmer for another 10 minutes, stirring occasionally, until golden brown.

    Add the broth and wine, bring to a boil, then let it simmer for about 15 more minutes. Peel the garlic and press it into the soup, seasoning with lemon juice, salt, and pepper.

    Preheat the oven on the grill setting.

    Transfer the onion soup into four heat‑proof bowls. Place two slices of baguette on each bowl and sprinkle the cheese over them. Bake in the preheated oven for about 5 minutes until the cheese melts, then garnish with parsley before serving.
