Ingredients
- 500 g spring onions
- 1 onion
- 1 Garlic clove
- 1 tbsp Vegetable oil
- 1 tbsp butter
- 0.5 tsp cumin
- 0.75 l vegetable broth (from a can)
- 0.25 l white wine
- 4 slices whole-grain bread
- 100 g grated Gruyère cheese
- 1 bunch chives
- salt and pepper

Clean the spring onions, trim the ends, wash them, and cut into thick pieces. Peel and finely chop the onion and garlic. Heat oil and butter in a pot, then sauté the spring onions, onion, garlic, and cumin over low heat.

Add the vegetable broth and wine, bring to a boil once, then simmer on low for 5 minutes. Toast the bread slices and place them in pre-warmed soup bowls. Sprinkle with cheese and pour the hot soup over them. Season with salt and pepper. Slice the chives into ribbons and scatter over the top.
