French Onion Soup with Red Wine

Ingredients
- 1 kg onions
- 50 g butter
- 1 l vegetable broth
- 250 ml dry red wine
- nutmeg
- Thyme (1 tsp fresh or ½ tsp dried thyme)
- a pinch of ground cumin
- 50 g raclette cheese (grated)
- 1 bunch parsley
- 4 slices bread (small, thick, crustless)
- 2 Garlic cloves
- Salt
- Pepper (freshly ground)
Instructions

Peel the onions and cut them into thin strips. In a pot heat the butter and sauté the onions until translucent. Add the broth and wine, nutmeg, thyme, and cumin, then simmer the soup for 25-30 minutes.

Toast the bread slices, rub them with a peeled garlic clove, and cut as needed. Press the garlic through a press and stir it into the soup. Season the soup with salt and pepper and ladle it into heat‑proof bowls.

Place the bread slices on top of the soup, sprinkle with cheese, and place the bowls under the grill for a few minutes until the cheese melts.
