Onion Soup with Cheese Bread

Ingredients
- 1 kg onions
- 50 g butter
- 1 l vegetable broth
- 250 ml dry red wine
- a pinch nutmeg
- 1 tsp fresh or ½ tsp dried thyme (or ½ tsp dried thyme)
- a pinch ground cumin
- 50 g raclette cheese (grated)
- 1 bunch parsley
- 4 slices baguette
- 2 Garlic cloves
- Salt
- black pepper (freshly ground)
Instructions

Peel the onions and cut them into thin strips. In a pot, heat the butter and sauté the onions until translucent. Add the broth and wine, nutmeg, thyme, and cumin, then simmer the soup for 25-30 minutes.

Toast the bread slices, rub them with a peeled garlic clove, and cut into small pieces if desired. Press the remaining garlic through a press and stir it into the soup. Season the soup with salt and pepper and ladle it into heat‑proof bowls.

Place the bread slices on top of the soup, sprinkle with cheese, and place the bowls under the grill for a few minutes until the cheese melts. Garnish with finely chopped parsley before serving.
