Ingredients
- 0.5 bunch rosemary
- 500 g onions
- 2 Garlic cloves
- 2 tbsp olive oil
- 800 ml vegetable broth
- 0.5 untreated lemon
- 2 tbsp pitted black olives
- 1 tbsp mascarpone (or crème fraîche)
- Salt
- ground pepper
- 1 tsp curry

Wash and dry the rosemary, pluck off needles and finely chop. Peel and dice the onions and garlic.

In a large pot, sauté the onions in hot oil over medium heat for about 10 minutes while stirring. Add the garlic and rosemary, cook briefly more. Sprinkle the curry on top, pour in the broth, stir well, cover, and let simmer for 10 minutes.

Wash the lemon hot, dry and grate its zest finely, then squeeze out the juice. Chop the olives small. Stir the lemon zest, olives, and mascarpone into the soup, season with salt, pepper, and lemon juice to taste.
