Ingredients

  • 2 red onions
  • 30 g ginger
  • 1 tbsp green peppercorns
  • 1 bay leaf
  • 50 ml apple cider vinegar
  • 80 g brown sugar
  • 500 g rowanberries
  • Salt
  • ground black pepper

Instructions

    Peel the onions and cut them into wedges. Peel the ginger and grate finely. Bring the onions, ginger, peppercorns, bay leaf, vinegar, and sugar to a boil and simmer gently for about 5 minutes. Add a little water if needed.

    Wash the rowanberries, trim them, and cut into roughly 1 cm pieces. Add them to the spice broth and cook while stirring occasionally for about 15 minutes until reduced. Season with salt and pepper, then fill sterilized jars. Allow to cool sealed.
