Ingredients
- 40 g almonds (peeled)
- 80 g wild garlic
- 120 ml olive oil
- 2 tbsp freshly grated Parmesan
- 100 g crème fraîche
- Salt
- 1 tsp lemon juice
- black pepper (freshly ground)
Instructions

Roast the almonds in a pan until golden brown. Remove from the pan and let them cool.

Rinse the wild garlic, shake dry, and roughly chop. Blend with the almonds and a little oil, gradually adding the remaining olive oil until the pesto reaches a creamy consistency. Stir in the Parmesan and crème fraîche, seasoning the sauce with salt, lemon juice, and pepper.
